Butcher’s tip: Bring it towards room temperature, sear well, then rest for 5–10 minutes. Keep the smaller fillet side a little further from the fiercest heat.

Lamb leg

A classic, versatile roasting cut with a clean lamb flavour and a balance of tenderness and texture.

Eating quality Lean, tender and full flavoured
Best cooking Roast whole, butterfly or grill
Butcher’s tip: For a whole leg, begin with a hot oven to colour the outside, then lower the heat to finish. Rest for at least 15 minutes before carving across the grain.

A richly flavoured cut with marbling and connective tissue that becomes succulent during long, gentle cooking.

Butcher’s tip: Dry the rind well and salt it before roasting. Give it an initial burst of high heat for crackling, then lower the temperature and cook patiently.

Roasting time varies with weight and equipment. Pork should always reach a safe internal temperature; ask us for guidance for your chosen roast.

Best cooking Pan, grill, poach or roast
Butcher’s tip: Even the thickness before cooking and remove it from the heat as soon as the thickest point reaches 75°C. Rest briefly before slicing.

Chicken must be cooked through to a safe internal temperature of 75°C at the thickest point, away from the bone.

From the hindquarter

Rump

A full-flavoured and versatile section suited to steaks, roasts and strips.

Common options: Rump steaks, rump roast, stir-fry or diced beef

Weights are approximate hanging weights before cutting, trimming and packing. Take-home weight will be lower after bones, excess fat and trim are removed, and the final mix depends on your cutting choices. Please call ahead to discuss availability and lead time.

Smallgoods, made the proper way.

We make our own ham, bacon, fritz, black pudding, kransky, salami and more. Our low-nitrate curing process reflects the way we believe smallgoods should be made: carefully, patiently and with as little unnecessary processing as possible.

Common questions.

A few things customers often ask us about our products, sourcing, traditional butchery and the shop.

Are your sausages gluten-free?

Yes—our sausages are made using rice flour rather than wheat flour. Please speak with us about individual flavours and your particular dietary requirements.

Do you make your own sausages?

Yes. Sausages have been made in this shop for more than 40 years, and we’re proud to continue that tradition today.

What gluten-free products do you have?

Quite a few of our marinated products are gluten-free, covering most meal and barbecue needs. We can also make gluten-free schnitzels to order, prepared first thing in the morning before our standard crumbed products to reduce the risk of cross-contact. Because we work in a shared premises, anyone with coeliac disease or a serious gluten allergy should contact us before ordering so we can discuss their needs.

Why are pasture-raised and free-range chickens being housed in barns?

H5 bird flu has been detected in wild birds in South Australia, although there are currently no detections in poultry or the agricultural production system. As a temporary biosecurity precaution, our pasture-raised chicken supplier has moved birds into large open barns, while free-range farms are also limiting outdoor access for part of the day to reduce contact with wild birds and help protect poultry supplies. The farms remain committed to animal welfare, using capped flock numbers to give birds room to stay active, together with feed and enrichment designed to reflect their normal outdoor environment as closely as practical.

When did the shop come under new management?

Bridgewater Quality Meats came under new management in May 2026.

Do you process carcass meat?

Yes, we do. Carcass butchery is a tradition passed down through generations of butchers, and it is a craft we are proud to carry forward as best we can.

Is your meat Australian?

Yes—all the meat we sell is 100% Australian. While there has been media discussion about imported beef and pork entering Australia, our commitment is clear: Bridgewater Quality Meats proudly supports Australian meat and Australian producers.

How can I place a large order?

Call the shop on (08) 8339 5753 and give us as much notice as possible. This helps us make sure the products you want are available in the quantities you need.
