Evolution & heritage

A local butcher, moving forward.

Bridgewater Quality Meats came under new management in May 2026, with a renewed focus on quality, trust, skilled service and a better experience for the community.

Experience behind the counter

Built through every side of the trade.

Before taking on Bridgewater Quality Meats, Lachlan completed his retail butchery apprenticeship six months early at Stirling Variety Meats, then built experience across independent butcher shops, supermarket meat departments and store management.

His work has included meat management with Klose’s Foodland and assistant store management with Peter G Bouchier in Melbourne, alongside hands-on Hahndorf experience working with Tim Noske at River Road. Following Tim’s passing, Carnivore took over the River Road operation, where Lachlan continued gaining experience in bulk beef and slaughterhouse processing. Across these roles, he organised private beef and lamb and built practical knowledge spanning carcass breakdown, smallgoods production, retail display, staff leadership and customer service.

Concept for the future Bridgewater Quality Meats shop
Looking ahead

Theatre of butchery.

Our future fit-out vision combines British Racing Green, warm timber and copper details with better lighting, clearer displays and more room for house-made products.

Behind the presentation is traditional craft: carcass butchery, sausages made in the shop for more than 40 years, and service built around cutting meat the way customers need it.
